What to expect after a demand letter is sent?

My former coworkers and I are currently in the process of suing our former employer and the local manager of a HUGE insurance company. My attorneys sent out a demand letter about 3 weeks ago. We finally got a reply from their attorneys saying that they will contact our attorneys next week to discuss the specifics of the case. What are they using this week for?? Also, will they throw out a settlement amount in the first discussion with our attorneys? Any answers or opinions will help
